A capon's a castrated male chicken. Surgical caponising (complete removal of both testes)'s performed when the chicken's 2 to 4 weeks old. Capons are marketed at 15 to 18 weeks, commercial broiler chickens at six to eight weeks, and roasters in about eight weeks.
